Hey bestie! 💚 I’m SO excited to share this Vegan Po’Boy Sandwich recipe with you. Imagine crispy, golden Gardein Fishless Fillets nestled in a toasted French roll, topped with tangy vegan coleslaw and a smoky remoulade sauce. It’s comfort food at its best—simple, satisfying, and full of flavor.

This recipe is inspired by Southern flavors and my Grandma’s cooking. She wasn’t vegan, but her meals were always fresh, veggie-forward, and made with so much love. This Po’Boy is my way of modernizing that cozy, nostalgic vibe while keeping it plant-based, healthy, and absolutely delicious.

Trust me—it’s giving Grandma vibes all the way! Let’s dive in.

Notes

Tips for Making the Perfect Vegan Po’ Boy Sandwich

How to Get the Fillets Extra Crispy:
Use the air fryer for the crispiest results! If using the oven, broil the fillets for 1-2 minutes after baking to get that golden-brown crunch.
Use Fresh, Crunchy Veggies:
Shredded lettuce, thinly sliced onions, and juicy tomatoes are key to balancing the richness of the fried fillets and remoulade sauce.
Toast the Bread:
Don’t skip this step! Lightly toasting the bread keeps it from getting soggy and adds an extra layer of texture.
Customize Your Po’ Boy:
Add extra toppings like vegan coleslaw, dill pickles, or fresh parsley to make it your own. You could even swap the Gardein fillets for Beyond Fish or your favorite plant-based protein.
Batch Cooking:
If serving more than 4 people, double the recipe! The fillets and remoulade can be prepped ahead of time to save you stress when hosting.
