Method

Cook the Gardein Fishless Fillets
  1. Oven Option:
Preheat your oven to 425°F. Place the Gardein Fishless Fillets on a baking sheet and bake for 10-12 minutes, flipping halfway through. For extra crispiness, finish them off under the broiler for 1-2 minutes.
  2. Air Fryer Option:
Preheat your air fryer to 400°F. Lightly spray the basket with oil, then place the Gardein Fishless Fillets inside (don’t overcrowd!). Air fry for 10 minutes, flipping halfway through, until golden and crispy.
Prep the Remoulade Sauce
  1. In a small bowl, whisk together the vegan mayo, Dijon mustard, hot sauce, smoked paprika, garlic powder, and lemon juice.
Adjust seasoning to taste and set aside.
Assemble the Coleslaw
  1. Ingredients for the Coleslaw:
1 bag of pre-cut deli coleslaw mix (16 oz)
    1/2 cup vegan ranch dressing
    1 tsp lemon juice
Optional: 1 tsp smoked paprika or dill (for extra flavor)
  2. Instructions for Coleslaw:
In a large bowl, toss the coleslaw mix with vegan ranch dressing.
Add the lemon juice and any optional seasonings (smoked paprika or dill).
Mix well and let sit for 5-10 minutes to allow the flavors to meld.
Toast the Bread
  1. Slice the French rolls in half . Lightly toast them in the oven, air fryer, or on a skillet for 2-3 minutes.
Assemble the Sandwiches
  1. Spread a generous layer of remoulade sauce on both sides of the toasted bread.
Add a handful of the prepared vegan coleslaw to the bottom half of the roll.
Layer the shredded lettuce, tomato slices, red onion, and pickles on top of the coleslaw.
Add 1-2 crispy Gardein Fishless Fillets on top, then close the sandwich.
Serve and Enjoy!
  1. Serve your vegan Po’ Boys immediately with a side of fries, chips, or a simple green salad. Pair it with a tall glass of iced tea for that extra touch of Southern charm. Trust me—"It’s Giving Grandma!" 🥪✨

Notes

Tips for Making the Perfect Vegan Po’ Boy Sandwich

How to Get the Fillets Extra Crispy:
Use the air fryer for the crispiest results! If using the oven, broil the fillets for 1-2 minutes after baking to get that golden-brown crunch.
Use Fresh, Crunchy Veggies:
Shredded lettuce, thinly sliced onions, and juicy tomatoes are key to balancing the richness of the fried fillets and remoulade sauce.
Toast the Bread:
Don’t skip this step! Lightly toasting the bread keeps it from getting soggy and adds an extra layer of texture.
Customize Your Po’ Boy:
Add extra toppings like vegan coleslaw, dill pickles, or fresh parsley to make it your own. You could even swap the Gardein fillets for Beyond Fish or your favorite plant-based protein.
Batch Cooking:
If serving more than 4 people, double the recipe! The fillets and remoulade can be prepped ahead of time to save you stress when hosting.
